I’ve decided to start sharing my easy vegan meal ideas again. Not only do I get asked about my #mealprep regularly, but honestly... posting these ideas actually keeps me motivated, creative, and accountable with my eating too! My fitness journey has kind of plateaued of late, and I keep messing up my nutrition goals. So starting fresh today (again)! Chick’n & veg spaghetti squash 330cal C32g/F8g/P33g I threw together this batch of lunches which I am super excited about! It’s quite a large plate, and very filling - but only 330 calories! 32g of carbs, 8g fat, 33g protein!!! I have to highlight... 4oz of spaghetti squash is only 35 CALORIES, as opposed to 4oz of spaghetti pasta being 400 CALORIES!!!! 1️⃣ YEAR AGO I decided to try a plant based/vegan “experiment” and I’m happy to say I’m never going back!! Since going plant based I immediately noticed a difference. I went 1 week without a migraine. Ok that’s great but has happened before so not too excited yet. Then 2 weeks without one! Really!? Ok it’s summer and nice weather we’ll see after I get my period though. 3 weeks later ok this is around the time I for sure get one. Still none. Week 4/1 month and my cycle came and went and no migraine!? I NEVER went a MONTH WITHOUT A MIGRAINE!! But don’t want to jinx it. Could be a fluke. Month 2, no migraine. I have thanksgiving dinner with my family and ate all the fixings. MIGRAINE!! After eating turkey I learned that chicken has the SAME ESTROGEN DNA AS HUMANS!! I ate chicken almost daily!! My dr said my hormone levels were “normal”!! What is “normal” anyway!! Since I went plant based/vegan I haven’t had any migraines EXCEPT for the time I ate thanksgiving dinner and accidentally ate a tiny dairy!! Hey Mother’s, you remember after giving birth and hormonal you were? Well that’s how the cows feel where our dairy comes from! Now my menstrual cycle is so much better, I barely get cramps worth mentioning when I used to have to take Advil for 3 days and arrives every month on the exact date!! Plus I feel better overall!! Do it for your health!! Try it for 30 days!! It’s hard but plan and do it with someone if you can!!
