Nutrition is one of the most important elements of child development. Recently a Project Left Behind supporter and volunteer, brought 2Go packets of NuttZo, an organic nut and seed butter, to the children of Nepal. Knowing nut butters are not common in Nepal, we were unsure how the flavor and texture would be received. Yet it was worth a try because NuttZo is a superfood and the childrens' diet is not varied. In short, it was a HUGE success! The kids couldn't get enough. "They were practically eating the packaging! It was a special treat for them" reports the volunteer. 🍎 Meal prep of the week! 🍎 Prepping is so important for me and my family with my lifestyle. If I didn’t do it I would waste a lot of money and time during the week trying to eat correctly. This week prep consist of: • Honey Sirracha Chicken breast w/ sweet potatoes, peppers, broccoli and carrots. • Grass fed ground beef with chili pepper, Brussel sprouts, pepper and tomato mix, with spinach and greens. • For my son: Mixed veggies, sweet potatoes, homemade Paleo chicken nuggets. • Breakfast: Egg muffin mix and oats • Bananas and fruits, avocados, rice cakes, and nuts for snacks • • • • DM for meal prep assistance or info! COCO VANILLA ALMOND BUTTAH STEEL CUT OATS 😋 - Steel cut oats are the healthiest type (although I do still eat rolled oats) because they’re the least processed + lowest on the glycemic index, which means they’re the least likely to cause spikes + highs in blood sugar + energy levels. - I prepped a batch last night for easy breakys for the week & this morning, I threw in homemade hemp milk, warmed them up & added toppings & it was probably the creamiest breakfast I ever had! My toppings are shredded unsweetened coconut, creamy almond butter, blueberries, apple cubes & pure organic vanilla instead of coconut sugar because it cuts sugar content & adds tons of bursting vanilla flavour! - 1️⃣TO PREP THE OATS: Add 1 cup gluten-free steel cut oats & 3 cups water to a small pot. Bring to a boil. Once boiled, lower heat to a simmer & cover for anywhere between 10-20 minutes. 10 will give you more al dente oats, while 20 will leave them creamier. I generally do 15 min. Stir the oats every now & then to prevent them from sticking/clumping & recover. Remove from heat & let cool. Don’t worry if there’s a bit of leftover liquid. It’ll get absorbed as they cool. Store in a container + refrigerate. 2️⃣FOR BREAKY: Portion out the oats & add to a small pot with 1/4 cup plant based milk of choice. I use between 1/3 to 1/2 cup of oats. Heat over medium heat until milk is absorbed & oats are creamy. Top with desired toppings & serve warm!
